Life, Love... and Sticky Buns

Wow! The last month has been incredibly busy. Between wedding planning, a long distance relationship, and two major deadlines at work, I pretty much had no life, and therefore, no time to blog. If you don't already know, I work at a CPA firm doing taxes for a living. It doesn't sound very glamorous, but I actually enjoy it! We just got through the two extension deadlines which fall on September 15 and October 15. Although I wasn't working crazy hours, it was still a very stressful time. I will definitely have to make sure I make time for blogging during next tax season!
On the bright side, wedding planning is going rather well. We have all of the big pieces of the puzzle put together and are now just working on the little details! My mom and I have been crafting away on different DIY/Pinterest projects that I hope to post about soon! I am in talks with my coordinator about flowers and centerpieces! I can’t wait to share all of the fun plans with you all!
Anyway, while in Iowa visiting my fiance, Nate, I made three different recipes from my Pinterest Boards. The first was a Tuscan Chicken Stew, the second was yummy pulled pork, and the third was some delightful sticky buns!
I have never been a huge breakfast person. In fact, until recently I did not even eat cinnamon rolls. Let’s just say I had a bad reaction to a cinnamon roll in the past and it took me years to get over it. Anyway, now I am making up for lost cinnamon roll-tasting years, which Nate appreciates. I stumbled upon this sticky bun recipe on Pinterest and decided it looked easy enough for me to try! And believe me when I say that they are gooood!






Sticky Bun Breakfast Biscuits

2 small tubes refrigerator buttermilk biscuits OR 1 tube Pillsbury Grands buttermilk biscuits 
3 tablespoons melted butter
1/2 cup maple syrup
1/3 cup packed light brown sugar
1/2 teaspoon cinnamon
1/4 cup chopped pecans, optional
1/4 cup chopped almonds, optional

Instructions:
Spray a 9x13 inch baking pan with non-stick cooking spray. In small bowl, mix the brown sugar, cinnamon, and nuts (optional) and put to the side for now. In a separate bowl, whisk together the melted butter and syrup.  Place about half of the syrup mixture on the bottom of the pan and then spread about half of the cinnamon/brown sugar mixture on top of that. Lay the biscuits on the bottom of the pan, overlapping edges (pictured above). Spread the remaining syrup and sugar mixtures over the top of the biscuits. Bake at 375 degrees for approximately 20-25 minutes. Let the biscuits cool for a minute or two before serving!

* I ended up using 1 tube of the Pillsbury Grands buttermilk biscuits and it was more than enough to serve two for breakfast.
** I also ended up only putting 1/4 cup pecans on my biscuits. If I were to do it all over, I would have added more!
